I “met” Andres Marquez on Twitter, he was a partner in Milagro one of the Mexican restaurants in Toronto and so when searching for recommendations for restaurants in Playa del Carmen he was one of the first people I asked.
Much has changed in a year, Andres left Milagro and is now moving onto a new business, Fonda Lola, and when he asked if I wanted to come over to try some of the food I didn’t hesitate because I knew it would be good.
He and his partners have been having people over three nights of the week to test recipes and not surprisingly they are getting great reviews. While he loves corn tortillas he lightens many of the dishes like the skinny tacos using lettuce as a wrap. Not surprisingly I thought the best dish was bacon cooked with jalapenos and agave nectar.
Yes I said jalapeno bacon. Just when you thought bacon could not get any better Andres mixed it with spicy and sweet.
Heaven.
You will have to forgive the camera phone photos in low light, the others he invited were so interesting I forgot to document as I was just content to sip tequila and meet new people. However, Fonda Lola is opening up temporarily as the kitchen in Reposado until they find their own space.
Don`t worry about the grainy photos, just go and eat one of everything and don’t forget the jalapeno bacon.
I imagine that jalapeños could be the best thing bacon has ever complimented itself with. Then again, I can’t think of too many things that wouldn’t go well with that taste-sparkling Mexican pepper.

Looks good! That’s always the way with me – the more fun I’m having, the less I remember to take decent photos, then I kick myself later when it comes to documenting it. You still made the bacon look very appetising.
Sometimes I just want to enjoy instead of documenting. My friend T asked if I wanted to take photos but I just wanted to eat!
OMG Jalapenos and Bacon are like, my two favourite things. I have them with cheese and make a toasted sandwich out of the three, absolute divine. 🙂

Spicy and sweet makes the best combination! Never thought of adding it to bacon but I must try it someday!
